I don't know the history of fermentation locks but I suspect that it is ancient and would like to know more.
We have been brewing beer and making wine for as long as recorded history.
There is a Babylonian tablet in the British Museum that is inscribed with a recipe for beer.
( To be correct, that is what the label tells me is written on the tablet.)
