Meat Free Sausage Rolls

These are so good! Mushroom, spices and herbs wrapped in puff pastry! Yum! I like to make them in advance so, when I鈥檓 super busy, I can eat them with a healthy salad as a grab-and-go lunch.

You will need
  • 1 tbsp vegetable oil
  • 1 pack premade ready rolled vegan puff pastry
  • 1 white onion, diced
  • 2 spring onions, chopped
  • 3 garlic cloves, minced
  • 400g chestnut mushrooms, finely chopped
  • 100ml apple cider vinegar
  • 1 tbsp jerk marinade
  • 1 tsp paprika
  • 1 tsp dried sage
  • 陆 tsp dried thyme
  • 20g parsley (leaves and stem, chopped)
  • 60g breadcrumbs
  • 陆 tsp salt
  • 陆 tsp black pepper

Before you start, make sure your grown-up knows you鈥檙e going to make magic in the kitchen! And do get help when using hot, sharp, or heavy objects while cooking...

MAKES 4

1.听Heat the oil in a large frying pan, add the onions and cook on a low heat for around 5 minutes until soft. Stir in the garlic and spring onion. Cook for another minute.

2. Now add the chopped mushrooms, apple cider vinegar and jerk marinade. Allow this to cook until all the water is gone around 20 minutes. It might be tempting to rush this stage but wait until all the liquid is gone or your sausage rolls might be squishy!

3. Tip the mushroom mix into a bowl and allow to cool a little. Now and the paprika, sage, thyme, chopped parsley, breadcrumbs and salt and pepper. Mix well.

4. Unroll the vegan puff pastry and cut into four. Spoon the mushroom filling in a sausage shape down each piece of pastry, covering half of the pastry. Leave one edge free.

5. With a pastry brush and a little water, wet the pastry without filling and fold the pastry over to make your sausage roll. Press to seal the pastry so the filling doesn鈥檛 escape.

6. Cut some slashes into the top of the rolls.

7. Place onto a baking tray lined with baking parchment and cook for 15 minutes or until golden brown.

8. Allow to cool slightly then tuck in and enjoy!
