Mega Movie Vegan Burgers

Who doesn鈥檛 like a burger? Especially my mega movie burgers! Packed with healthy chickpeas, yummy sweet potato and some kicking flavours, they are perfect for feeding the cast and crew when we are all busy filming.

You will need
  • 2 tbsp sunflower oil, plus extra for frying
  • 1 small red onion, finely chopped
  • 2 spring onions, sliced
  • 2 garlic cloves, crushed
  • 1 tsp jerk marinade
  • 1 tsp all-purpose seasoning
  • 1 400g tin of chickpeas, liquid drained
  • Salt and pepper
  • 75g breadcrumbs
  • 2 sweet potatoes, baked in their skins until soft and left to cool
  • Plain flour, for your hands
  • To serve: vegan burger buns, salad and sauces.

Before you start, make sure your grown-up knows you鈥檙e going to make magic in the kitchen! And do get help when using hot, sharp, or heavy objects while cooking...

SERVES 4

1. Heat the sunflower oil into a frying pan over a medium heat. The oil is hot enough, it will move to the edge of the pan creating a hole in the middle. Be careful with hot oil!

2. Add the red onion and spring onion. Listen for the sizzle! Stir every now and again until nice and soft.

3. When the onions are soft, add garlic, jerk marinade and all-purpose seasoning. Give it a good stir until everything is coated. Spoon the mixture into a large bowl and set aside to cool.

4. In a separate bowl, squash the chickpeas with the back of a fork until you have a crumbly texture.

5. Peel the cooled sweet potato and peel off the skin. Add this to the onions. Squash and mix until all combined.

6. Next add the mashed chickpeas with salt and pepper. Mix all together until it is even.

7. Dip your hands into flour to stop them getting too sticky and roll in to 4 burgers.

8. Tip the breadcrumbs into a plate. Roll each burger in breadcrumbs until completely covered. Pop into the fridge for 30 minutes to firm up.

9. Pour some oil into the bottom of the frying pan over a medium heat. When hot, fry the burgers for a few minutes on each side until golden and crisp.

10. Serve on burger buns with any toppings you fancy.
