Vegan Vegetable Fritters

My vegetable fritters are one of my family鈥檚 favourite savoury dishes for when us McQueens are having a party. Packed with spice and vegetables, they are super easy to make and taste GREAT!

You will need
  • 400g plain flour
  • 1 tbsp baking powder
  • 1 tsp salt
  • 1 tsp ground black pepper
  • 1 tsp paprika
  • 1 tsp dried parsley
  • 1 scotch bonnet, diced (If you like things a bit less spicy, use less of this chilli. Don鈥檛 use the seeds or the pith if you don鈥檛 like spice)
  • 陆 red pepper, diced
  • 陆 green pepper, diced
  • 陆 yellow pepper, diced
  • 2 spring onions, finely sliced
  • 500ml cold water
  • Vegetable oil, to fry

Before you start, make sure your grown-up knows you鈥檙e going to make magic in the kitchen! And do get help when using hot, sharp, or heavy objects while cooking...

MAKES 14聽

1. Carefully chop all your vegetables or ask an adult to do this for you. Be careful with the chilli - it鈥檚 spicy!

2. In a bowl mix the flour, baking powder, salt and pepper, paprika and parsley

3. Add your chopped onion, chilli, peppers and spring onion

4. Slowly add your water and mix until smooth.

5. Carefully, add a splash of vegetable oil to a frying pan on a medium heat.

6. Spoon some mixture into the frying pan, until it spreads to 8-10cm. Fry for 5 minutes, flip over and fry for another 5 minutes or until golden.

7. Take the fritters out of the pan and place on some kitchen roll to absorb any extra oil.

8. Repeat with the rest of the mixture, adding a little oil each time. Keep going until you鈥檝e used up all the batter.
