What does usually happen to the characters of the children when they grow up? Are they supposed to be played by the same actor from the beginning on? This seems to me a bit ridiculous, because I can't imagine, e.g., George still being played by the same actor in 20 years

A *long* time ago, all the pre-teen characters were played by "Shula".
Daniel is still the same actor as when he was born.
Others variously have other actors - Kate's been played by 3 or 4 actors, for example.
Will Grundy is, I believe, played by the same actor who played him as a child, ie Philip Molloy, the son of Terry Molloy who plays Mike. However, that's quite unusual. Most characters are played by different actors in childhood, adolescence and adulthood.
Alice, Emma and Christopher: in each case the actor joined the cast when the character was in early teens, I think, so these actors have grown up in real time with their characters. Ed's case is a bit different as Barry Farrimond is four years or so older than Ed and he was 19 when he joined the cast.

There's no usually or supposed, juttacanuta. It varies from character to character depending of the performances that the young actor is giving, their availability, interest etc.
