I'm sure I knew this once, but when things turn violent - as in tonight's epic duel between Kenton and Ryan - how do they record it? I take it the actors aren't genuinely coming to blows!

Actually the sound is almost certainly added later. It certainly is in film and TV - the Foley Artist's job.
Chopping at a Spring Cabbage used to be used to simulate the sound of a blow. (Stabbing doesn't make a noise.)

Not in radio drama. Almost all effects are played sumultaneous to the action, whether recorded or "spot" (ie physical). A cabbage certainly make a good head subsitute, though.
