I thought Veal was from calfs kepted on milk so how can it be Veal if the calf are out in a field

Welcome to the board.
It's called 'pink veal' or 'rosé veal' and is produced from bull calves raised on pasture. There's an article on it in the Backstage news section of this site.

These calves have a nurse cow, so presuambly are out to pasture but still suckling occasionally
