Following a debate, I'm left with the question as to if there have ever been any characters who have identified themselves as catholics? We've had nearly every other religion and creed but not this? Any clues?

Siobhan Hathaway was an RC. She went to the catholic church in Borchester.
George Barford was married to a Roman Catholic, and his children were RCs too.

It depends what you mean by catholics. I think Sally is right about Siobhan, who as far as I remember has been the only identified catholic. But I suspect Nora MaCaulay was at least lapsed if she wasn't practicing and Paddy Redmond probably had a catholic background. Then there's Mercedes Goodman who was Spanish and married to a fan of Franco.
