Does anyone know why the leaves on my coriander are turning pink/red?
And would it still be ok to eat it?
There are still some green leaves but just seems a bit strange.
They are too cold. Many plants put out red leaves, or the current leaves turn red when they get cold. If they are this years sowing, and I assume so as they are annuals here, then you are more than a tad early I suspect. I never sow coriander until mid May. If you keep them going in the warm, with plenty of light, they will grow green leaves and you can discard the red ones, though I doubt they would do you any harm, better safe than sorry.
