How can I tell if my gooseberries are ripe and ready to pick? They seem big enough but they're quite hard. WE never have shop-bought goosegogs so nothing really to compare them with. Do I need to wait a bit longer or is that it? I don't particularly want to try one straight off the stem!
You might wish to take off every other berry and use them as `tart` ones for cooking which will give the remainder space and energy to ripen fully for dessert purposes

They will be ripe when they give a little when squeezed gently between finger and thumb. They will also have slightly changed colour :- mid green to yellow green, and light red to dark red, depending on the variety.
My father has gooseberry bushes and he takes some off for me to make crumbles (mmmmm) and leaves the rest to get bigger. He has very thick gloves for the picking. Those thorns are wicked!
