Hello, I have 2 lovely chilli cayene plants with dozens of little chillis forming. But as a `ready meal man' what can I do with them once I have them? Many thanks.

Make chilli jam to serve as a condiment with sausages, cold meats and in sandwiches.
10 cayenne chillies
3 cloves garlic
400g tin of chopped tomatoes
750g soft brown sugar
250ml red wine vinegar
Blitz the chillies, garlic and toms in a food processor than heat in a pan with the sugar and vinegar. Stir thoroughly till all the sugar is dissolved and then simmer, stirring occasionally, till reduced and thick.
Pot up in clean jars which have been warmed in the oven at 50C. Seal whilst still hot.

What I have done is remove the seeds, (being really careful as they are lethal if you then rub your hand to your eye) I wear plastic gloves, roast them until they are dry in a coolish oven (couple of hrs if I remember correctly) leave them overnight until they're really dry.Then use the blender to make them into flakes. You can store them in a jam jar that's been in the dishwasher and add them to Pizza or any dish you want to add a bit of heat to.

Hiya, I've succesfully frozen whole chillies,lay them out flat on a tray to freeze separately,bag them up,then you can just use them when required, it's easy to slice and de-seed them if you want to, or you can just use them whole.
