Hi, i have just been given some beetroot from a fellow allotmentee, and im after some idea what to do with them, storge them etc, ive just trimmed the leaves off and i believe you can eat them???? look forward to hearing from you.
Boil them for an hour with roots still on, peel, slice and eat, or you can freeze them cooked and sliced for winter salads.

Cut the tops off, leaving about an inch, and then boil for an hour.
When cold, skin them - it should just rub off.
Slice and put in a jar and cover with malt vinegar.
I've pickled my first batch and I've also roasted it in the past.
But what I'd really like to try this year is beetroot cake and there is a recipe on the Â鶹¹ÙÍøÊ×Ò³Èë¿Ú Food site for chocolate beetroot muffins. would also like to try making beetroot ice cream, I tried it earlier this year and it was pretty yummy!
Sorry, just remembered - someone posted about roasting beetroot a few days back and had a reply with a recipe for beetroot jelly.

I was always told to "twist" the leaves off the top rather than trim since they are supposed to bleed less when they are cooking.
Never done a back to back comparison but have always done it that way. Boil as advised, suggest 40 mins for medium size beet, run under cold water until cool, rub off skin and slice into a bowl with couple of spoonfuls of brown sugar, malt vinegar and salt and pepper to taste - lovely .
Will keep for 10 days in the refrigerator. Even better add some slices of mild onion and some strong cheddar cheese for a sandwich and a meal fit for a king.

Is there still time to sow some beetroot now? I am about to pull up the peas so will have a gap in the veg plot.
Getting late now IMHO suggest some Autumn lettuce, fresh sowing of herbs especially parsley for freezing, late spring onions if your lucky.
