I've just harvested 11 ENORMOUS courgettes after neglecting my allotment for a couple of weeks. They are bigger than any marrow I have ever seen let alone courgettes!!! Any ideas what I can do with them?
Stop calling them courgettes! They are now marrows and stuffing them seems a likely option.

Yes.
Please send them to me!
There's a fabulous book by Elaine Borish - "what will I do with all those courgettes?" its has section for "overgrown" ones. I've used it to make chutney, bread and a few dishes like layer bake or stuffed pasta shells. Really great ideas.
I've got one large courgette / small marrow at home and tonight I will half it lengthways and roast it on the oven for 15 - 20 mins mins whilst making a topping to pour on top. Tonights topping will be a bolognaise type affair which is poured over then topped with cheese and returned to the oven for 20-30 mins depending on how big the dish is. Its a version of stuffing them that means you get more filling! Also works well with a keema aloo mix as well - yum!
Lovely recipe from Â鶹¹ÙÍøÊ×Ò³Èë¿Ú Good Food for chocolate and courgette cake. It's really good and you can freeze it un-iced.
courgette can never turn into marrows since marrows are different group of squash contain spaghetti squash, white vegetable marrows and long trailing marrows.
courgette are just small zucchinis.
Next year I'm planting only one plant and not four. SO fed up with them.
my wife has just made a cake using one third of a large marrow, 12 ounces of sugar, half a pint of vegetable oil, 12 ounces of flour, cinnamon and dessicated coconut.
I have to say that at first I was sceptical because I don't like marrow but it was delicious, you couldn't taste the marrow at all.
Top & tail, whizz up in blender & freeze in portions. Add to mincemeat for shepherds pie etc.
Use them to make soup & freeze.
When I get a glut, I get the oven really hot, cut them up into chunks, toss them in oil add some chopped garlic, thyme, salt and pepper and roast them till well coloured.
Delicious hot or cold as a side dish; or a course in themselves.
And here was I thinking that my 890g courgette was a monster of a beast! It was the result of being away for five days. After I picked that one I found a second one but that was more normal in size.
Half of the big one was stuffed with some chicken, lemon juice and mozzarella cheese and the other cut into chunks that was baked at the same time with some oregano and soy. The cheese was sprinkled with some paprika and oregano.
The stuffed courgette was not that nice but the chunks roasted with some soy and oregano was delicious.
Can you post the recipe for the cake I've tried on the Â鶹¹ÙÍøÊ×Ò³Èë¿Ú Food site, with no luck.
Many thanks.
I cut them into inch cubes and cook them in a frying pan with onions, herbs garlic and oil, then freeze in bags for winter use. You can add tomato or pepper or aubergine too. If time is short, just freeze the cubes and add the other ingreds when you have more time. Marrow and ginger jam is one of my favourites too
There are plenty of ideas online too.
3 eggs
200ml vegetable oil
400g sugar
400g marrow grated and drained
1 tsp vanilla
1 tsp baking soda
600g flour
1 tsp baking powder
half tsp salt3\4 tsp nutmeg
1 tablespoon cinnamon
100g raisins (optional)
mix eggs ,oil,sugar,marrow,vanilla
mix flour , baking powder,soda,salt
add to the first mixture and combine well
pour into 2 loaf tins (greased and floured)and bake for 45-50mins on gas 4
My courgette plants always produce too many courgettes or ones that are too big - I am the only one in the family who eats them. So, I compost the excess and pick the nice sweet small ones, just for me!
