Hi,
Of my 6 courgette plants 2-3 of the plants are producing mushy friut with yellow skin. they have had plenty of water, the leaves look healthy.
Any clues please?

What size are the courgettes getting to before the problem starts? If they're on the small, underdeveloped side, it's likely a pollination problem. Partly-pollinated flowers can produce a courgette but it's usually doomed to failure. You can help the pollination process along by hand-pollinating with a toothbrush, fine artist's brush, or similar.
Other possibilities could include over-fertilising, particularly too much nitrogen.
