The holes are either slugs or wireworm
if the ground was grass recently it is more likely wireworm and the problem will get better
if not it is slugs and is caused by the wet weather and leaving them in the ground too long and not baiting them.
The brown inside can be blight or it may be eelworm or it can be a number of other diseases. Did you use proper seed potatoes which should rule out seed born diseases
The cavities? are probably due to irregular watering letting it get too dry and then over watering (can of course be heavy rain)

I have the same problem with most of my maincrop this year, slugs did the damage, some were still in the spuds as I picked them.

About 25% affected,by careful selection the good ones will be stored for later use and the holed ones used as soon as possible.

If you are peeling the spuds the holes go with the peel anyway.

they were seed spuds and as soon as they leaves stems showed signs of blight they were cut to the ground, my garden as had lots of slugs this yr thanks to damp weather.

I was wondering how long can spuds last in soil?

Our Maris Pipers had some slug damage also light scab, the king edds and roosters next door are clean as a whistle maybe slugs dont like red?, the rooster have had the stems cut off yesterday, we are away in croatia from today for a month, hopefully when we return the skins will have thickened and we will dig them all up and store in hessian sacks, our christmas spuds are doing very well.

if you have slug problems they will get worse the longer you leave them. They will just hollow out the middle of the potato

If it is a slug problem, slugs are laying their eggs this time of year ready for next years population so I'd avdise think ahead sprinkle pellets or any other type of deterent you use to control their number now. I've sprinkled pellets on my empty beds.
