I love beetroot but theres only so much I can eat before I go completely purple!
I have so much I'm running out of ideas, I've tried cakes (fabulous), chutney (maturing for christmas), roasted, boiled... anyone have any other ideas? I must have another 3 or 4 kg still in the ground and they're just getting bigger!!
note to self, grow less and do them in succession next year...
how about soup..........then you could freeze it!!
You could always go and work in Willy Wonker's Chocolate Factory
What about pickling it.
If grown on an allotment have you thought of veg exchange at the end of each growing season. Kind of self explanatory, you exchange some of your surplus with other growers surplus. Just a thought...
The Â鶹¹ÙÍøÊ×Ò³Èë¿Ú Food site has loads of beetroot recipes and if you google "beetroot recipes" you'll get loads more.
Meanwhile, you can bake cooked, diced beetroot with cream and horseradish and optional cheese topping in a shallow gartin dish to serve on its own with crusty bread or as side dish for fish. Adding butter beans makes it a hearty vegetarian supper.
Why not sell some at your front gate? There's nothing as nice as freshly cooked beetroot, I can eat it like an apple, and often do!
Give Madhur Jaffrey's "Beetroot with onions" (Shoredar Chukander) a go. Great as a side to a good curry. Cheers, Tony.

Kleftiwallah, I can thoroughly recommend that dish, in fact it's one of the major reasons for me growing my own beetroot. Home grown tomatoes make it even more satisfying. Any beetroot left will be pickled or roasted.
One of our favourites too for either vegetarian dinners or to accmpany chicken or pork chops.
Borsht is what you need - russian beetroot soup.
My wife did some earlier in the summer and it was delicious both hot, and cold.
Heres a recipe - cant be certain its the one she used as shes at work, but she searched google at the time so as this came out near the top it probably is. Really worth a go.
That recipe looks very inviting so I've added it to my favourites for when the second wave of beetroot is ready.
