I am having to move my greenhouse for building work but have got loads of green toms. I have put them in trays but should I cover them with newspaper or not?

Julie, add a couple of ripe bananas to the trays as they help the riping process by giving off a gas, forgotten what it's called.
I think the gas is ethanol, isn't it?
I've put my tomatoes on a tray in a sunny porch along with long peppers. Both have spent a long time being green and are now turning red!

Hi julie. I picked the last of my green tomatoes about a month ago. I put them on the shelves of my cold room in the Basement.(no light) None ever rot or not ripen. Have been making a batch of roasted tomatoes every week since. There is enough tomatoes left to ripen for one more batch.
I tried the banana approach this year and the result was a frankenfruit. The toms took up the horrid taste of banana (I hate bananas). It ended with me throwing the whole lot in the wormery.
Ps the gas is Ethylene, but I guess your toms are having a ball with all the booze you treated them too

You could always make green chutney if you don't want to wait for the tomatoes to ripen!

Let them ripen slowly without a banana. Put them into a box between layers of newspaper and leave them somewhere dark like under the stairs or in a cool cupboard. You will still be eating them at Christmas fresh and ripe with a good flavour. Dont put any damaged ones in there. Check them every so often to see their condition.
A ripe tomato always tastes best, but you can use green tomatoes in lots of ways, not just for chutney. They are great fried up or baked in the oven, or use in a stew, ratatouille, gratin in the oven,
don't be afraid to cook with them!

Oops, my mistake. Thanks K-J! I promise I do not have boozy tomatoes. I never did go for Bloody Maries...
