This year I grew far too many beetroots and have been giving them away, pickling them, making cakes etc all summer. There are still some in the ground and I wondered if the frost will render them useless. I dug some up last weekend which were frosted but they boiled ok and are still really tasty but after the weather of this past week I'm thinking they might have been the last. Are they destined for the compost heap?
Well, I left mine in the ground one winter, and they became very woody, so I haven`t done that since.
But when I mentioned it here, one or two other people said theirs survived just fine.
So I don`t know the exact answere to this one.
Come to think of it, Ian, pickled beetroot probably wouldn`t have become such a common preserve if you could have safely left the beets in the ground.
Beetroot can be safely left in the ground overwinter.
