Am I right in thinking there is a rose called 'Ice Berg' ? My father was very fond of a rose that was covered with white flowers. Any information welcomed please.
A quick google would have answered your query, but here's the answer anyway...

It is a white floribunda.
Iceberg is very reliable , it does get plenty of white flowers.
Of course, it`s not the only white rose. There are many to choose from, but Iceberg is a good one.
The rose name is all one word vis; Iceberg;
Did a plant search for you the results are here;

I have it in my garden, it's a very pretty rose but it does suffer badly in the rain and grows a bit messy as well, I have to tie it up as it does grow quiet a height and get's leggy.

It could be that you are not pruning it hard enough. I always pruned mine back to approximately 6inches, to an outward pointing bud.
