Are all violas edible? If not, which varieties should I look for?

Hello moniquenl,
Violas are not poisonous or, indeed, any of the pansy family. They have no culinary importance but the flowers are edible. The Victorians used to sugar coat them for cake decoration.
I use them as an addition a summer salad. The flavour is nothing special, as far as I can make out, but they look great.

I've eaten violas. They make a talking point in salads and are lovely sugared on cakes.
Nasturtiums, Callendulas, marigolds, roses and carnations are all edible but only eat the petals, the rest is bitter!
Squash flowers are great deep fried in tempura batter. Basil, chives, coriander and Rocket flowers are edible too
