Hi everybody.
I had a good year with parsnips, and some are still in the ground. Now they are sprouting again. I think I heard/read somewhere that it is advisable to eat them before that happens, but it was not clear whether it would be best to eat them before, or if one definitely should not eat them after they have sprouted again. Does anybody know? I would hate to see them wasted, they are so tasty!

I'm still eating my crop. I'd eat them now. They're not going to get any better.
We're still eating ours, too. In a couple or weeks or so, any left will be lifted, stored in moist compost and eventually eaten.
Still eating mine and they've started sprouting again. Doesn't seem to affect the flavour but I suspect they'll become woody if you leave them too long. Parsnips grow over 2 years so they'll be starting to use up their internal goodness to produce the seeds this year.
You'll soon know when they become inedible as they become tough and stringy as their energy reserves start to be diverted to producing their flower stalks.
