I have been chiiting potatoes for a few years but noticed this year that my Jerseys that I chitted as you are supposed (in egg cartons out of direct sunlight in a light room blah blah) aren't doing much whereas the spares that have been in the shed in the dark which have 2-3 inch green sprouts. These seem in my mind to have chitted better. Why is this? Should I just plant out the spares with the long tenticles and not bother with the centimeter black sprouts with green studs from the ones that have been in the light for 4 - 6 weeks?

Light affects the growth by slowing it down. If still in the semi-dark, growth is increased to reach the light to start photosynthesis as soon as possible.
It does not really matter which ones you use.
They will all grow so why not plant all of them? You don't HAVE TO chit potatoes, you can plant them "as is", it just means you will be able to harvest them sooner if you chit them. Green sprouts sound healthy. When my shop-bought potatoes grow sprouts in my cupboard they are white. Last year the seed potatoes I bought had already sprouted so against advice on here to chuck them, I rubbed the white sprouts off and started chitting them. They grew fine dark sprouts and produced a good crop.
