hi all,can anyone tell me can you freeze raspberrys,i have such a bumper crop this year ,given loads away but would like to keep some if possable. thankyou
Yes you can!
Open freezing is recommended... ...for simple instructions.
Or you could make a coulis and freeze that.

I freeze the majority of mine and use them straight from frozen. I put them in a large plastic bag, seal the top with a clip removing all the air, spread the fruit out in a layer within the bag and then freeze. Once frozen I then shake down the fruit into the base of the bag and clip close to the fruit again removing any air. I know open freezing is recommended but this way I don't end up with loose fruit in the bottom of my chest freezer!
Raspberies are the best of all the soft fruits for freezing, they don't go 'yucky' like strawberries do (best t use those for compote or jam). Freeze them on open trays, then bag up. Use in crumbles, on ice cream, just to get the taste of summer when its winter - oh yummy! Ours tend to get eaten before they reach the freezer, but i will try again ..............
If you want to keep their shape and make it easier to use a few at a time then freeze them all on a baking tray first. Then transfer them to a bag once completely frozen. You can take out as many as you want at a time then. Raspberries always go sour once they have been frozen too, so they may need some sugar in a pie, but if you are making pavola or something similar then the sweetness of the meringue and the sharpness of the raspberries is lovely.
Oh yes, raspberries (unlike strawberries) freeze really well. When they thaw, they're a little soft and the juice runs, but they keep their flavour and aroma. I always try to keep some for making a trifle at Christmas.
