Hi
Have grown rhubarb from seed this year, transplanted into pots and have now planted them out into the garden. The three plants all look healthy with big leaves and each have a number of stalks about 12 inches long and around half an inch wide.
Have heard that you shouldn't harvest in the first year, so do I just leave them alone now to die down or do I cut the stalks down at some stage?

Basically you have heard correctly but;
You could always try a stalk or two,if you have not already done so
What you must not do is remove all the leaves/stalks as this will stop photosynthesis which can be detrimental to the plants.
I just let mine die down and clear up at the end of the season.
Clearing up is optional if you are a wildlife consevationist the debris left can be used for hibernating wild life, both the Good & Bad (e,g slugs or should I say there eggs)
The choice is yours!
I did the same as you and grew from seed. I've given everyone in the family plants for their veg plots, but still I had 4 left. So they are taking up quite a bit of space in my limited bed. They look great and I told my husband that I was tempted to pull some this year, just to taste it, as it looks big and strong, but I read that I shouldn't do it till next year.
