Squirrel Stew

Fancy a bowl of delicious squirrel stew? It may or may not be an 'ethical' food, but there are recipes for cooking squirrel and some of them have been around for a long time. Recipes vary from traditional home cooking to haute cuisine.

Brunswick Stew is a dish from the US which traditionally contains squirrel, although you can use chicken.

There's some controversy over where it originates and there are competing claims from two places, Brunswick, Georgia, or Brunswick County in southern Virginia.

Recipes vary greatly but the stew is usually tomato based and includes corn and potatoes with a variety of other ingredients.

It resembles a thick soup.

Nowadays, you're more likely to see squirrel on the menu at an upmarket restaurant.

Berkshire chef Chris Prow has written a book of Berkshire recipes. He recommends squirrel and says it tastes like a cross between chicken and rabbit... with a hint of nuts!
