Pan fried fruit skewered kebabs

Another top recipe from the kitchens of the Travellers Rest in Mapperly. Enjoy a starter of lightly fried fruits covered in a fruity salsa dressing

Serves one.

Ingredients:

• 1/2 banana 
• 10g Strawberries
• 1 Kiwi fruit
• 20g Mango
• 5g Peach
• 1/4 lemon
• Icing sugar
• Plain flour
• 2 bamboo skewers
  
  

How to make the salsa:

• Remove the skin from the mango and peach, put aside 10g of the mango then finely dice the rest of the mango and peach.
  

How to make the sauce:

• Puree the remaining mango, adding to it some icing sugar and the juice from the lemon.

How to make the kebabs:

• Cut thick chunks from the bananas and kiwi fruit and put them on the skewers along with the whole strawberries.
• Mix a little icing sugar and plain flour together, cover the fruit kebabs with the mixture, place in a hot pan with a little oil then fry until golden.

The final preparation:

• Place the mango and peach salsa into the centre of the plate.
• Layer the kebabs across the salsa.
• Drizzle the mango sauce over the fruit kebabs
