Dr Clare Bailey Mosley's Easy Breakfast Omelette

INGREDIENTS

  • ½ tbsp olive oil
  • ½ small onion peeled and finely diced
  • 4 free-range eggs
  • 30g diced cured chorizo
  • 30g cheddar, grated
  • 30g cooked or leftover greens
  • Sauerkraut

METHOD

  1. Place a non stick frying pan over a medium heat. Add the oil and onion and cook for 2 minutes
  2. Crack the eggs into a small shallow bowl and whisk with a fork. Season well with ground black pepper, then pour over the onion.
  3. Leave for 30 seconds to start to set, then use a spatula to pull the egg to the centre of the pan, allowing the runny mixture to flow into the empty space. Do this several times
  4. When the omelette has started to set, add the chorizo, cheese and greens
  5. Cook for another 2 minutes, scatter chilli if using
  6. Fold one half over the other, and slide onto a plate to serve
