Lambing might be big business - in fact it's worth around 625 million pounds to our economy every year - but it's also a gamble. All week, Kate Humble and Adam Henson have been broadcasting live from the Beavan family's lambing sheds in Wales, but in the final show Kate discovers that being a farmer is as much about the books as anything else, while Adam looks at how to make money out of sheep. We all know about meat and wool, but what about sheep's cheese?
