Stephen Chisholm's Guinness Chicken And Chocolate Mint Cheesecakes

BBQ Guinness Baked Whole Chicken

Chicken:
1 large fresh chicken, whole
1/2 can of Guinness Extra stout
2 tbsp olive or rapeseed oil

BBQ Sauce:
1 tbsp olive or rapeseed oil
1 garlic clove
1 red onion
1 heaped tbsp tomato puree
1 tbsp plain flour
1/2 can Guinness Extra stout
60g dark brown sugar
2 tbsp red wine vinegar 聽
1 tbsp dried thyme
1 bay leaf
1 tsp rosemary

1.聽聽聽聽聽 Preheat your oven to 220掳C/200掳C fan.

2.聽聽聽聽聽 Prepare the chicken by rinsing it under cold water and patting dry then rub the oil all over seasoning with salt and pepper. Pour out 陆 the can of Guinness and reserve the rest for later. Poke holes into the top of the can. Stand the can upright on a roasting tray and place the chicken over the top so that the legs and can make a tripod.

3.聽聽聽聽聽 Transfer the tray to the hot oven and immediately reduce the temperature by 20掳C. Cook for about 1 hour basting every 15 minutes.

4.聽聽聽聽聽 For the BBQ sauce; heat the oil in a pan over a medium-low heat, meanwhile roughly chop the garlic clove and onion. Sweat for 5-7 minutes then stir in the tomato puree and flour. Deglaze the pan with the reserved 陆 can of Guinness followed by the sugar, red wine vinegar, thyme and bay leaf. Lower the heat and let reduce for a good 20 minutes. Blend the sauce until smooth then stir in the rosemary to finish.

5.聽聽聽聽聽 Remove the chicken from the oven and discard the can. Pour the BBQ sauce all over the chicken and cook for a final 10 minutes.


Individual Chocolate Mint Cheesecakes

Individual Chocolate Mint Cheesecakes

Base:
8 Oreo cookies
30g butter, melted

Filling:
240ml double cream
225g cream cheese
1 small bunch of mint leaves
陆 tsp vanilla
4 tbsp icing sugar

Topping:
6 Oreo cookies
50g white chocolate
Mint leaves to garnish

1.聽聽聽聽聽 For the base; blend or bash the Oreo cookies until fine and stir in the melted butter. Press equal amounts into the individual serving dishes.

2.聽聽聽聽聽 For the filling; whip the double cream to stiff peaks and set aside. In a food processor blend the cream cheese, mint leaves, vanilla, icing sugar and a pinch of salt until smooth and the mint leaves have been evenly distributed. Fold into the cream gently then either spoon or pipe equal amounts on top of the prepared bases.

3.聽聽聽聽聽 For the topping; roughly crush the Oreo cookies and scatter over the cheesecakes. Melt the white chocolate and use a teaspoon or fork to drizzle random lines over the top of the cheesecakes. Garnish with the mint leaves and set in the ridge until needed.
