Chris Fearon's vanilla cheesecake with spring berries

250g creamed cheese

350ml whipping cream

125ml milk

150g sugar

1 tbsp vanilla essence

3 egg yolks

120g sugar 12g gelatine

For the base

180g biscuit

60g butter

Method

Whisk your cream until soft peaks and place into the fridge.

Beat the cream cheese with a spoon until soft and leave to one side.

Mix the milk, egg, sugar and vanilla essence in a small pot and heat very slowly mixing all the time.

Soak the gelatine and add it to the hot egg mix and allow to cool to room temp.

When cool add to the cheese mixing all the time then fold in the cream, leave the mix to one side and make the base.

For the base, bash up the biscuits and mix with the 60g of melted butter.

Fill little jars or glasses with the biscuit mix then spoon in the cheesecake mix and place into the fridge to set.

Should take 1 hour.

Finish them with fresh spring berries chopped and sprinkled on top.
