Stephen Chisholm's Pea and Broccoli soup

Ingredients

2 tbsp olive oil
1 medium onion, chopped
1 tbsp sugar
1/2 broccoli stalk included, chopped
750ml vegetable stalk
250g frozen peas
1-2 tsp lemon juice
Salt and pepper to taste
Cr猫me fraiche or yogurt to serve

1.聽聽聽聽聽聽 Heat the oil in a large pot over a medium heat; add the onions and leave to sweat for a good 5-10 mins until soft and translucent. Stir in the sugar followed by the chopped broccoli and cook for聽two minutes.

2.聽聽聽聽聽聽 Add your stalk and then your peas, stirring to mix everything together. The frozen peas will have reduced the temperature of the boil, so increase the heat until simmering, at which point leave it for about 20 mins or until the peas and broccoli are tender. Check every so often so that they do not lose their vibrant colour.

3.聽聽聽聽聽聽 When ready blend until smooth then return to the pan and season with the lemon juice, salt and pepper. Serve with cr猫me fraiche or yogurt and sliced bread.
