Alan's Jam Squares

Ingredients

1/2 cup of sugar

125g margarine

1 extra large egg (beaten)

2 and a half cups of cake flour

2 tsp baking powder

Pinch of salt

Method

Cream the margarine and the sugar.

Add the beaten egg and sift in dry ingredients, this will make a dry mixture. Cut the dough into two. Spread the larger half over greased baking tin (22cm x 22cm).

Spread with apricot jam and grate the remaining dough over it. Bake in moderately hot oven, about 190C for roughly 30 minutes. Lightly coat the mixture with icing sugar when cold and cut into squares.
