Marcus Wareing, Monica Galetti and Gregg Wallace preside as six chefs battle it out for a place in the quarter-final. The chefs face a pastry challenge set by Monica.

In the second heat of the week, six of the UK's most determined chefs make the journey to the MasterChef kitchen ready to fight for the coveted title. Ahead of them are two challenges set to test their basic skill level and their culinary flair and creativity, all under the unforgiving gaze of Monica, Marcus and Gregg. Only the best three chefs will remain in the competition and continue on to the quarter-finals.

It is no easy start as first the chefs must face one of the competition's most terrifying rounds - the skills test. To pile on the pressure, they have to perform their task in front of all three MasterChef judges. The first three chefs begin with a skills test set by Marcus, who asks them to prepare scallops in three different ways: in a mousse, sauteed and as a tartare. In fifteen minutes, they must prove they have the skill to execute all three techniques to the standards expected by the judges. The remaining three chefs must complete Monica's skills test - a pastry challenge. They have fifteen minutes to make a sweet sabayon and serve it glazed with fruit. To master this egg yolk, sugar and champagne custard, these chefs will have to keep their nerve and whisk fast!

In the second challenge, all six chefs have the chance to put the skills test behind them and wow the judges with their signature dish. They have one hour and fifteen minutes to showcase their style, technique and plating to Monica, Marcus and Gregg, and serve up a dish worthy of a quarter-final place. After this round, the three weakest chefs will leave the competition and three will continue in the battle to be crowned Professional MasterChef Champion 2015 in the quarter-final.
