"Meet the boss" today it's Mark Yates H&W Fire Service

The inaugural Herefordshire food week continues with Kelsmore Dairy and we look into autumn fashion with Ian Moore from Wild Heart an independent designer store in Kidderminster. See below for salads.

Potato Salad
You will need a Pestle and Mortar and ready boiled new potatoes, leave them whole and to cool before pouring dressing over.

Dressing: grind a clove of garlic with some sea salt then add about half a teaspoon of mustard powder.

Add a glug each of white wine and balsamic vinegar with some olive oil and then mix together.

Add some chopped shallots and chopped chives.
Poor over potatoes.

Apple and beetroot Salad

2 Apples
2 Beetroot uncooked(not from a jar or skinned)
Mint Leaves
Feta Cheese
Vinaigrette
Lemon Olive Oil

Thinly julienne the apple and beetroot into a bowl, add mint leaves and feta cheese and then pour over the vinaigrette and a drizzle of lemon olive oil.
