Food Friday: Comes from Jo Medhurst. Sausages with Monster Mash and Pumpkin Port Gravy

A lovely Spooky dish perfect for a Halloween or Bonfire supper. Serves 2

You will need:

6 Good quality sausages
3 Large Potatoes peeled and cut into even sized chunks
1 large beetroot boiled and skinned
30g butter
2 tablespoons of double cream

For the gravy you will need

100g pumpkin flesh
2 large plums
Salt and pepper
A couple of measures of port

First, get the sausages cooking. Place them into a hot frying pan with a dash of oil, brown them on all sides, then turn the heat down low and gently cook for 30 to 40 minutes, turning frequently. Do not pierce the skin as this lets out all the lovely juices.

Meanwhile, put the potato chunks into cold water and bring to the boil, simmer gently until cooked through. Have the butter and cream ready in a small saucepan, melt gently and put to one side.

Place the pumpkin flesh and plum into a saucepan, just cover with water, simmer gently and pass through a sieve, add the port, salt and pepper and put to one side.

When the potato is cooked, drain thoroughly, mash and add the melted butter and milk, salt and pepper. Add the finely grated beetroot and mix thoroughly.

Arrange the monster mash in the center of a warmed plate, place the sausages on top of the mash, pour the gravy on and around the mash and serve spookily!

Gently steamed kale. runner beans or brussell sprouts would all go well with this.
