Triple Chocolate Marshmallow Surprises

Ingredients:
- 12 (approx) large marshmallows
- 340g plain flour
- 100g cocoa powder
- 1 tsp baking soda
- 250g Trex
- 30g butter
- 170g caster sugar, plus extra for rolling later
- 80g soft brown sugar
- 2 eggs, beaten
- 100g dark chocolate, melted
- Pinch salt
- 100g dark chocolate chips

Method:
1: Heat oven to 170C. Cut the marshmallows into bite sized pieces and put in the freezer.

2: Cream together the Trex, butter, caster sugar and brown sugar.

3: Combine the flour, cocoa and baking soda in a large bowl, mix well.

4: Add the eggs to the wet mix, beat until thoroughly incorporated.

5: Add half of the flour mix, mix well, add the rest and the melted chocolate and chocolate chips and mix until thoroughly combined. the mix will be very dense and quite dry.

6: Put some cake mix in the palm of your hand and flatten, add a marshmallow to the centre then carefully wrap around to cover, roll in the palm of your hand to make a ball then roll it in the caster sugar. repeat with the remaining mix.

7: Put mini muffin cases into a muffin tray then bake for 7 minutes. They will feel soft when they come out, leave to cool before eating.
