There are many different types of lentils and each has a different texture and requires slightly different cooking times. Puy lentils are a versatile and robust lentil that hold their shape and texture once cooked. Puy lentils are easy to cook and can be batch cooked to use for meal prep – they can also be served hot or cold. Once cooked allow to cool completely and place into an airtight container for up to 3 days.

To cook puy lentils, put the puy lentils in a sieve and rinse thoroughly with cold running water. Transfer the lentils into a large saucepan with three times their volume in water (or stock for more flavor). Place the saucepan over a high heat and bring to a boil. Boil for 30 seconds and cover with a lid. Reduce the heat and allow to simmer for 25 minutes until the lentils are cooked through. They should be soft on the outside and slightly firm in the middle. Remove from the heat and allow to sit in the pan, with the lid on for 5 minutes. This allows the center of the lentils to cook gently. Drain away any remaining water and use as desired.
