Learn how to get the best results from tofu with these three easy cooking methods from Elly Smart.

To prepare

For best results freeze your tofu before cooking, this changes the consistency and makes the tofu spongier and better to absorb flavour, this works best with firm tofu rather than extra firm tofu. The water in the tofu expands when it is frozen. When removed from the freezer the ice crystals that have formed in the tofu melt, but the larger holes that have been created remain, leaving more space for marinades and sauces to permeate the tofu.

Slice the tofu into whatever size you would like to use when cooking and place onto a lined tray suitable for the freezer, and freeze for at least 2 hours.

Once the tofu is frozen in individual pieces, place into a reuseable plastic bag to save space if freezing for a long period of time. The tofu can be frozen for up to 3 months – tofu often turns slightly yellow when it is frozen, this is fine.

Once you are ready to cook with the tofu you can transfer to the fridge overnight to defrost or run the tofu pieces under water until defrosted. Pat dry to remove any excess moisture.

To pan fry

Add 1 tablespoon of vegetable oil to a frying pan over a medium high heat. Add the tofu pieces and brown on each side, rotating them every 1–2 minutes, for a total of around 15 minutes, until nice and crisp. At this point add whichever flavourings you'd like – allow the tofu to continue to cook, stirring frequently, until the sauce has been absorbed into the tofu and caramelised around the edges creating a crispy exterior. Add the tofu to salads, stir frys, noodle bowls or into soups for a crispy texture!

To bake

Place the tofu into a dish and pour over a marinade, a few splashes of soy sauce and sesame oil work well, enough to lightly cover the tofu. Cover and allow the tofu to marinate for about 30 minutes at room temperature.

Transfer the tofu to a lined baking tray, ensuring that they are spaced evenly so each piece can bake and not sweat. Place into a preheated 200C/180C Fan/Gas Mark 6 oven for 35–40 minutes, turning halfway through. The marinade can be reserved and brushed onto the tofu during the baking for extra flavor. Baked tofu can be served as a main dish or added to noodle bowls, rice bowls, or salads.

To air fry

Place the tofu into a dish and pour over a marinade, a few splashes of soy sauce and sesame oil work well, enough to lightly cover the tofu. Cover and allow the tofu to marinate for about 30 minutes at room temperature.

Place into the tray of the airfryer and fry for 10–15 minutes at 200C, giving the tofu a shake halfway. The tofu is done when the outside is nice and crispy. Eat the tofu as a snack or add into stir fries or salads.
