Peaches with Bourbon Smoked Salt Sauce and Waffles
Ingredients:
4 ripe peaches, halved, stone removed and cut into slices
250ml buttermilk
50g melted butter
1 teaspoon vanilla
1 egg
250g plain flour
1 tablespoon caster sugar
½ teaspoon baking powder
¼ teaspoon baking soda
Method:
Whisk the buttermilk, melted butter, egg and vanilla together in a large bowl.
Sift all the dry ingredients into a bowl.
Whisk in the wet ingredients to create a smooth batter. Rest for 10 minutes.
Cook in a lightly oiled waffle iron for about 4 minutes.
Grill peaches for a few minutes on both sides, until lightly charred and fragrant.
Bourbon smoked salt sauce
Ingredients:
100ml double cream
100ml dark brown sugar
75ml bourbon
½ teaspoon smoked sea-salt
Method:
Place in a pan and boil for about 5 minutes.
Place the peaches on a waffle and top with the sauce.
