Yuletide biscuits

Spiced Yuletide biscuits with Jewelled Centres

Ingredients
125g soft butter
100g soft brown sugar
125ml golden syrup
1 egg yolk
375g plain flour
1 teaspoon baking soda
3 teaspoons Florence’s sweet spice mix
Boiled fruit sweets

Florence Irwin’s Sweet Spice Mix
This is a batch recipe. Either grind whole spices in a coffee grinder to a fine powder or for ease use pre-ground spices if available.

Ingredients
15 grams or 3 teaspoonfuls each of All Spice, Mace, Cinnamon, Cloves, Nutmeg, Coriander Seeds and 6 teaspoonfuls of caster sugar.

Method
Set oven to 180oc and line two baking trays with parchment paper.
Beat the butter, sugar and syrup until pale and fluffy.
Add the yolk to combine.
Mix the flour, baking soda, ginger and spice together and mix with the butter mixture to a smooth dough.
Turn onto a floured surface and roll out thinly.
Cut into snowflakes and place on the trays.
Cut out a smaller middle snowflake.
Place some of the same coloured sweets in a piece of parchment paper and bash to a fine powder with a hammer.
Fill the gap in the biscuit with boiled sweets of different colours.
Bake for about 12 minutes in the oven – swap the trays over half way to ensure even cooking.
Cool on a wire rack before serving.
