Pork Griskins, apple and kohlrabi salad

Pork Griskins

Ingredients:

8 griskins
25g seasalt
10g sugar
Few sprigs thyme
1 clove smashed garlic
100ml water
200ml buttermilk

Method:
Place salt, sugar, thyme and garlic with water in a pan and simmer until the salt has dissolved.

Add the buttermilk.

When cool add the griskins and chill for 6 hours.

Ingredients:

150g panko breadcrumbs
50g porridge oats
100g plain flour
¼ teaspoon salt
2 teaspoons mustard powder
Oil for cooking

Method:

Mix the flour, salt and mustard in a bowl.

Mix the crumbs and oats in a separate bowl.

Take a griskin and shake off the brine, dip in the flour, shake off the excess, dip back into the brine and coat in the crumb.

Repeat.

Cover the bottom of a pan with oil and when medium hot add the griskins (probably best to do this in a couple of batches and keep cooked ones warm in the oven).

Cook for about 3 minutes each side or until crisp and cooked through.

Drain on kitchen paper and serve with the apple and kohlrabi salad.

Apple and Kohlrabi salad

Ingredients and method:

1 Kohlrabi sliced thinly then cut into thin strips
1 Bramley apple, quartered, cored, sliced thinly and cut into strips
1 tablespoon cider vinegar
1 red eating apple, quartered, cored, sliced thinly and cut into strips
4 scallions finely chopped
100ml mayonnaise
100ml sour cream
Salt to taste
