Cooking is a form of escapism for Anthony, especially as he works in a high-pressured job handling 999 calls and allocating ambulances. He loves to travel a lot and usually brings recipes home as souvenirs.

Anthony has recently got into making Middle Eastern and Syrian food after meeting a doctor from Syria and visiting refugee camps on the Lebanon border. He also likes to cook Italian, Scandinavian and American food, especially comfort food.

Anthony likes researching how to make food as traditional and authentic as possible and make dishes that have a story or narrative behind them.
