Teabread

Ingredients

  • 175ml hot strong tea
  • 225g mixed fruit ( I used a mixture of raisins, sultanas and dried cranberries)
  • 1 teaspoon mixed spice
  • 225g self raising flour
  • 1 egg

Method

Pour the hot tea over the fruit and allow to infuse for at least 4 hours but preferably overnight.

Set oven to 170oc and line an 10 inch cake tin with parchment paper.

Mix the flour and spice together.

Mix in the fruit and liquid with the egg to a smooth batter.

Spoon into the tin and bake for about 45 minutes or until an inserted skewer comes out clean. Cool in the tin for 15 minutes and remove.

Slice and serve with butter.

Coalisland Iced Tea

Ingredients

  • 1 lapsang souchang teabag
  • zest and juice of 1 orange
  • 100g castor sugar
  • 50ml elderflower cordial
  • 50ml gin
  • 250ml brown lemonade

Method

Make the tea up with 200ml of water and place in a saucepan with the orange zest, juice and sugar. Bring to the boil and simmer until the sugar has dissolved.

Allow to infuse and cool for about 30 minutes.

Strain off into a jug. Add the cordial and gin and mix well.

Add lots of ice and top with the lemonade.

Serve.
