Chocolate and fudge fondants with maple roast pears
Chocolate and fudge fondants
Ingredients
- 225g chopped dark chocolate
- 225g chopped butter
- 250g castor sugar
- 6 egg whites
- 125g plain flour
- 6 cubes fudge
Method
Butter 6 Individual pudding bowls or ramekins and line the bottom with parchment paper. Set oven to 200oc.
Melt the chocolate and butter in a heat proof bowl over hot water.
Remove from heat and whisk in the egg whites and sugar.
Fold in the flour and mix well.
Spoon into bowls and press in a piece of fudge into each.
Bake for 14 minutes or until just set on top when you touch.
Turn onto plates, remove paper and serve with pears and cream or ice cream,
Maple roast pears
Ingredients
- 4 ripe pears
- 2 tablespoons maple syrup
- 50g brown sugar
- 50g butter
Method
Peel the pears, cut in quarters, remove core and cut in half again.
Place in a baking dish and dot over the butter, sprinkle over sugar and drizzle syrup.
Bake for 25 minutes, basting occasionally or until soft.
