Lisa's Sweetcorn Soup

INGREDIENTS

2 x 150g Tinned sweetcorn

1tbsp Vegetable Oil

1 Clove Garlic

500ml Chicken Stock (Hot)

100g Single Cream

½ Onion (Sliced)

Pinch Salt

TO GARNISH

Pinch of Chopped Herbs of your choice

Handful Sweetcorn (From the tin above)

METHOD

1. Place a medium sized pan on the heat. Add the vegetable oil, sliced onion and garlic, and cook down under a lid for 3-4 minutes. The onions should be soft with no colour.

2. Add the hot stock, cream and a good pinch of salt.

3. Bring to the boil.

4. Take a handful of sweetcorn and leave on the side to garnish.

5. Then add the remaining sweetcorn to the pan and re – boil, cook for 2-3 minutes.

6. Place into a blender and blend until smooth.

7. Pour in a good portion of soup and garnish with sweetcorn and chopped herb of your choice.
