Briony's Baked Beans Three Ways
FANCY BEANS ON TOAST
Spiced ingredients
• 2 slices sourdough
1 tin baked beans
• 1 tsp cinnamon
• 1 tsp cumin
• 1 tsp allspice
• 1 tbsp BBQ sauce
Crispy Bacon and Spring Onion ingredients
• 2 slices sourdough
• 1 tin baked beans
• 2 rashers smoked bacon
• 1 spring onion
Pineapple and Yogurt ingredients
• 2 slices sourdough
• 1 tin baked beans
• ½ tin pineapple pieces
• 100ml plain yogurt
Methods
1. Toast and butter the sourdough to your taste.
2. For all the fancy beans variations, start by heating up your tin of beans in a pan.
3. For the spiced beans, add the spices and sauce to the pan and stir through. Heat until bubbling then pour over your toast.
4. For the crispy bacon, while your beans are heating, fry the bacon until crispy then chop into small pieces. Chop me spring onion finely. Pour the beans over the toast then top with the bacon bits and spring onion.
5. For the pineapple beans, stir through the pineapple while the beans are being heated. Pour the beans over the toast then top with a dollop of yogurt.
NACHO TORTILLA STACK
Ingredients
• 4 tortilla wraps
• 1 tin baked beans
• 500g beef mince
• 1 tin chopped tomatoes
• 1 small tin sweetcorn
• 1 red onion, diced
• 2 tsp cumin
• 1 tsp chilli powder
• 1 lime
• Bunch of coriander, finely chopped
• 150g mature cheddar, grated
• 200ml soured cream
• 1 avocado
• 1 chilli, diced
Method
1. Oven on to 180C. Fry the beef mince in a drizzle of olive oil until browned then transfer to a bowl. Add the onion to the same pan and cook for a few minutes until soft. Add the cumin and chilli powder then cook for a minute until fragrant. Pour in the beans, chopped tomatoes and sweetcorn, season with salt and pepper to taste, then let simmer for 5 minutes.
2. Place a tortilla wrap in the base of a loose bottom 8 inch cake tin then top with â…“ of the beef mixture. Sprinkle over a handful of grated cheese. Repeat with 2 more tortillas then top with the final tortilla and sprinkle over any remaining cheese. Place in the oven for 15 minutes.
3. Peel and stone the avocado then mash roughly with a fork.
4. Take the stack out of the cake tin and top with the mashed avocado, sour cream, coriander and chilli.
BAKED BEAN TRAYBAKE
Ingredients
• 1 tin baked beans
• 3 eggs
• 250ml vegetable oil
• 2 tbsp honey
• 400g golden caster sugar
• 300g self raising flour
• 1 tsp baking powder
• 1 tsp cinnamon
• 1 tsp allspice
• 1 tsp ginger
• ½ tsp salt
• 1 tsp vanilla extract
Icing ingredients
• 250g unsalted butter
• 500g icing sugar
• 1 tsp vanilla extract
• ½ tsp cinnamon
• ½ tsp allspice
• ½ tsp ginger
Method
1. Oven on to 180C then grease and line a brownie tin with baking paper.
2. In a bowl, use a stick blender to blitz the beans until smooth. Add the oil, eggs, honey, vanilla extract and sugar then blitz again. In another bowl, mix together the flour, baking powder, spices and salt. Fold the dry ingredients into the beans mixture until combined. Pour into the prepared tin and bake for 30 minutes until a skewer comes out clean. Set aside to cool.
3. To make the icing, beat the butter until smooth and pale then add the icing sugar. Beat again until incorporated. Add the vanilla extract and spices then mix well. Cover the sponge with the icing.
