Pear, Chocolate and Pecan Pudding
Ingredients
- 4 ripe pears
- 200g butter, chopped
- 4 eggs
- 150g castor sugar
- 150g soft brown sugar
- 75g plain flour
- 50g cocoa powder
- 1 teaspoon ground cinnamon
- 100g dark chocolate, chopped
- 50g chopped pecan nuts
Set your oven to 170oc and lightly butter a baking dish.
Method
Melt the butter and stir in the sugars. Allow to cool.
Whisk the eggs and mix into the butter mixture.
Sift the flour and cocoa, and whisk into the mixture with the cinnamon.
Peel and quarter the pears, then remove the core and place in the dish.
Pour over the cake mixture.
Poke the chocolate and nuts into the batter.
Bake for 30 minutes.
Serve warm with ice cream or cream.
