Summer Berries

Summer berries with lemon sabayon, accompanied by lemon and coconut macaroons

Ingredients

  • 125g strawberries
  • 125g raspberries
  • 125g blackcurrants
  • 75g castor sugar

Method

Cook the blackcurrants with the sugar until soft. Cool.

Lemon Sabayon

Ingredients

  • 4 egg yolks
  • 75g castor sugar
  • 50ml lemon juice or Limoncello

Method

Place yolks, sugar and lemon juice or liqueur in a heat proof bowl and place onto a pot of simmering water.

Whisk constantly until you can leave a figure of eight in the mix - the mixture will thicken and become paler.

Divide the berries into 4 bowls, top with the sabayon and grill or blow torch to glaze.

Lemon and coconut macaroons

Ingredients

  • 2 egg whites
  • Zest 1 lemon
  • Juice 1/2 lemon
  • 170g desiccated coconut
  • 100g castor sugar

Method

Line a baking tray with parchment and set oven to 180oc.

Place all the ingredients in a bowl and mulch together with your hands.

Pat to about 1cm thick and cut into small rounds with a pastry cutter.

Place on tray and bake for about 12-15 minutes or until golden. Cool and serve.
