75g chopped dates
75g chopped dried apricots
50g dried cranberries
125g raisins
125g sultanas
300ml strong tea ( I used spiced Chai)
50ml whiskey or rum ( add 50ml tea to replace it if you don’t want to add alcohol)
225g self raising flour
200g soft brown sugar
1 egg
½ teaspoon ground nutmeg
1 teaspoon mixed spice
Mix the fruit in a bowl and pour over the hot tea and whiskey.
Cover and leave overnight to soak.
Set oven to 180oc.
Mix the flour, sugar and spices in a bowl and add the fruit, any juices and the egg.
Mix well and spoon into a lined loaf tin.
Bake for about an hour and a quarter or until an inserted skewer comes out clean. Cool in the tin and turn out.
Slice and cook on a grill pan to warm.
Whiskey candied fruits
100g castor sugar
50ml water
50ml whiskey ( or apple juice)
2 pears
2 apples
2 plums
Frozen berry fruits
Peel the pears, quarter and core. Slice into chunks
Quarter, peel and core the apples and slice each in quarter in 3 pieces.
Cut the plums in half, remove the stone and slice each half in 3.
Heat the sugar in a large frying pan until caramelized.
Add the water and whiskey and cook to a syrup.
Add the apples, pears and plums and cook on a high heat for 5 minutes.
Add the frozen fruit if using and cook for a minute.
Serve with the teabrack and a dollop of cream or icecream on the side.
