Lisa's Easy Pizza
Makes 2 x 9” pizza bases.
DOUGH INGREDIENTS
- 250g strong bread flour (you can substitute half of this for '00' flour if you have any)
- 1 tsp salt
- drizzle of extra virgin olive oil
- 20g fresh yeast or 10g of dried yeast
- 155ml lukewarm water
TOMATO SAUCE INGREDIENTS
- Drizzle of olive oil
- 1 small onion, peeled and finely diced
- 2 garlic cloves, crushed
- 200g good quality tinned chopped tomatoes
- 2 tbsp tomato purée
- 1 tbsp balsamic vinegar
- 1 tsp dried oregano
- 1 tsp sugar
- Salt and pepper
+ TOPPINGS AND CHEESE OF YOUR CHOICE.
METHOD
- Sift the flours and salt together and place into a bowl. Make a small well in the centre.
- Blend the oil and yeast together in the lukewarm water.
- Pour the yeast liquid into the well and gradually start to incorporate the flour with your fingertips to create a soft dough.
- Remove the dough from the bowl on to a clean work surface and knead the dough for around 10 minutes until it becomes smooth and elastic.
- Then shape the dough into a ball and cover loosely with some lightly oiled cling film or a clean tea towel. Leave to rest for 30 minutes at room temperature, or leave overnight in the fridge.
- Next, make the tomato sauce. Drizzle a little olive oil in a saucepan and place over a moderate heat. Add the onions and sweat until softened and caramelised.
- Add the garlic and cook for a further minute. Add the remaining ingredients, bring to the boil and then turn to a simmer for approximately 7-10 minutes until the sauce thickens. Stir occasionally.
- Season with salt and black pepper and blend until you have a smooth consistency. If you prefer a more rustic sauce, you can skip the blending.
- When you a ready to cook your pizzas, pre-heat the oven to 220°C fan.
- Knock back the dough and then roll the pizza out to the required size and thickness about the thickness of a £2 pound coin.You can use your hands to push out the dough if you don't have a rolling pin.
- Sprinkle some fine semolina or flour over an upside-down baking tray or pizza stone and arrange the rolled out dough on top.
- Spread the surface of the pizza dough with a little tomato sauce, and sprinkle over a thin layer of grated mozzarella cheese.
- Add the toppings of your choice.
- Bake in the pre-heated oven for 10 minutes until the base is crisp and the cheese is golden brown. Top with a handful of rocket and serve immediately.
